Turkey Rigatoni
TURKEY RIGATONI & SPICY TOMATO BUTTER SAUCE
Comfort food is key for us during this difficult year that is 2020. We always turn to carbs, and it’s always a good day when pasta is involved.
I love our home made spicy tomato butter sauce, so I wanted to drown some rigatoni noodles in some meat sauce. You can totally use ground beef, or any ground meat really. We have to be conscience of Brandon’s auto-immune disease, so no serious red meat most of the year. Every now and then, we will cook with ground turkey, and I actually love it, so no complaining here.
I think it works well here, but I’m a ground turkey fan. I also love turkey burgers. This is a very simple, hearty recipe. You can even make the sauce ahead of time, and heat it up before the meat is ready to be mixed in.
Just add some grated parmesan and parsley, and you’re done.
TURKEY RIGATONI WITH SPICY TOMATO BUTTER SAUCE RECIPE
Spicy Tomato Butter Sauce Ingredients
1 onion, chopped
2 tablespoons olive oil
3 tablespoons butter
1, 28oz can whole peeled tomatoes
1 tablespoon chopped fresh rosemary
2 tablespoons chopped fresh basil
1 teaspoon red pepper flakes
1 teaspoon sea salt
1 teaspoon ground fresh black pepper
1 lb ground turkey
Pasta Ingredients
16oz rigatoni noodles
1/2 cup chopped fresh parsley
1/2 cup fresh grated parmesan
Instructions
Start with the sauce. Saute the onions in olive oil for 5 minutes on medium. Add in butter and fresh herbs, along with spices. Cook for another 1-2 minutes. Pour in the whole tomatoes, and cook down for 20 minutes. Using an immersion blender, blend the tomatoes until sauce is smooth. Let cook for 10 minutes on low.
While the sauce is cooking for the last 10 minutes, start cooking the turkey in a skillet until browned with salt, pepper and a bit of red pepper flakes. Continue to break up the turkey so that the meat sauce will not have big chunks of meat in it. This should take about 8 minutes.
Also while the sauce is cooking, boil the noodles so everything can be done around the same time. Once meat is done, add to the sauce or the sauce to the turkey, whichever pot is bigger. Continue cooking the meat sauce on low until the noodles are ready.
Once noodles are ready, drain, and add back to boiling pot, so you can add the meat sauce to the noodles. Stir well, incorporating the sauce throughout the rigatoni.
Serve in bowls, topping with parmesan and parsley.
