Medjool Date Board Game Night

Making a charcuterie board for friends and/or family can be pretty intimidating. Do I have enough? Is there too much? Does this assortment make sense? Maybe this looks bad?
When you have a game night, even if you’re still in quarantine, there’s usually more than just you to feed. Make a night of it!
The truth is, you first have to decide what kind of board you want to serve to people. There’s cheese, meats, cheese and meats, breads, fruit, fondue varieties and many many more.
The idea here for me is to really punch up sweet and savory. Medjool dates are amazing. I feel like you can put any type of strong savory flavor with them and it’s an explosion of flavor. Plus, they’re bite size. Perfect for game night!
I’ve incorporated slices of mango, celery, fresh tomatoes and a spicy pepper agave syrup for dipping, which I have to tell you, is glorious for the stuffed jalapenos.
STUFFED JALAPENO BOATS & MEDJOOL DATES RECIPE
This is going to be laid out a little different. Since it’s such an interactive snack, you will have to stuff and incorporate the amounts you want, and your other hungry eaters are comfortable with. I’ll list the ingredients below and the temperature to set the oven on to make, but how you build it is up to you! I created some fun cheese and pancetta filled stuffed jalapenos and “tomatoes in a blanket” with grape tomatoes stuffed with goat cheese in dates and wrapped in the pancetta. Have mercy!
Ingredients
Box of whole Medjool Dates
Box of chopped Medjool Dates
Dozen jalapeños, halved and remove seeds
Packaged Pancetta
Shredded cheddar cheese
Honey goat cheese
Brie cheese
Grape tomatoes
Cream cheese
Sun-dried tomato pesto
Mango
Celery
Agave nectar with chili pepper flakes
Black pepper and salt to taste over all prepped oven dates and jalapenos
Instructions
Set oven to 400°F. Line a baking tray with foil. As I mentioned before, you will have to create these little gems how you want to with your amounts to taste. Bake them for 18 minutes all together to save time and cleaning dishes. The two things to remember are, you’re stuffing halved jalapenos, and stuffing those dates! I used the chopped dates to put on top of the cream cheese and pancetta in the jalapeno boats.
