CHOCOLATE MOUSSE WITH CLEVELAND TOFU

I know what you’re thinking. Tofu? In a chocolate dessert? But hear me out. It’s very smooth.

It’s also a healthier option. I love this Cleveland brand Tofu. It’s got a great texture, but even though it’s extra firm, it breaks down nicely with the bananas in the recipe.

There’s melted chocolate involved here as well, and cocoa powder. There’s even a dash of coconut oil for an extra chocolate sheen.

It’s quick, and makes quite a bit for the family!

CHOCOLATE MOUSSE WITH CLEVELAND TOFU

Ingredients

  • 16oz extra firm Cleveland Tofu (or any tofu)

  • 2 ripe bananas

  • 2 tablespoons instant coffee

  • 2oz 70% cocoa dark bittersweet chocolate

  • 1 teaspoon coconut oil

  • 6 tablespoons cocoa powder, unsweetened

  • 2 tablespoons agave nectar

  • 1 tablespoon vanilla paste

Instructions

Place tofu in food processor and blend until creamy.

Add bananas and process until smooth.

In a double broiler saucepan, melt chocolate pieces in glass bowl with coconut oil above boiling water. Add the instant coffee powder to mixture.

Add chocolate mixture to tofu along with remaining ingredients and process until smooth.

Transfer mousse into serving bowls!
