Chili And Lime Shrimp Tacos

CHILI AND LIME SHRIMP TACOS WITH A CILANTRO AVOCADO DRESSING

If you’re wanting to shake up your weeknight or even weekend taco game, then this is one recipe you have to try, and it’s super easy.

Make it easier on yourself! Not cleaning up for an hour is self-care. I use a cilantro avocado dressing to finish off these tacos.

I’ve always been a huge fan of ground beef tacos growing up with the hard shell kits that mom would buy. We absolutely LOVED them. Maybe it was just a 90s kid thing, but we ate them up once a week for sure. When I got to college I didn’t really ever make these anymore. I didn’t start making tacos again until I was in my late 20s, and even then they evolved to fish tacos. To this day we still eat fish tacos the most, but when I do a taco bowl, it’s usually ground turkey.

But these shrimp are a game changer. I get the best shrimp from our local Heinens. They are pretty large, and amazingly fresh. Even their prepared lunch section has AMAZING grilled shrimp. AMAZING.

chili powder and Tajin seasoning are so perfect on these delicious shrimp.

CHILI AND LIME SHRIMP TACOS WITH A CILANTRO AVOCADO DRESSING RECIPE

Ingredients

  • pound of fresh shrimp, remove tails, deveined, and halved

  • corn or flour tortillas

  • cilantro avocado dressing

  • 2 tablespoons melted unsalted butter

  • 1/2 cup chopped cilantro

  • 1 teaspoon garlic powder

  • 1/2 teaspoon black pepper

  • 1 teaspoon chili powder

  • 1 teaspoon Tajin seasoning

  • 1/2 teaspoon kosher salt

  • squeeze of lime for shrimp before cooking, and limes for topping if wanted

  • romaine lettuce, shredded

  • red cabbage, shredded

  • roma tomatoes, thinly sliced and quartered

  • small red onion, diced (for topping)

Instructions

Coat the shrimp in butter, garlic powder, pepper, salt, chili powder, Tajin seasoning and cilantro, and toss on the grill or sauté pan for 3-5 minutes. Grill until you are comfortable they are done to your liking. Set aside when done on a paper towel lined plate.

Toast your tortillas on the stove if you like, or in a pan to get an added char.

Time to construct your tacos.

I layer with the lettuce and cabbage, then the shrimp, then onions and tomatoes. Top it off with more cilantro if you like, and the cilantro avocado dressing. Don’t forget any extra squirt of lime juice!
