TURKEY RACHEL SANDWICH

This recipe is a different take on the classic Reuben sandwich. I actually prefer it, but just ever so slightly because sliced turkey has less gristle. I mean, who doesn’t like a Reuben though, honestly?

Why You’ll Love This Recipe:

  • Heinen’s Two Brother’s turkey off-the-bone sliced packaged deli meat is a premium quality cut. It’s always fresh and can be found in the open deli counter shelves. These slices are slightly thicker, and really pack a bite to these sandwiches. Also neighboring the turkey are the options for cheese slices. Fresh Swiss for us please!

  • The sliced rye bread also comes from the bakery in Heinen’s. It’s thin enough to really allow room for the ingredients of this sandwich to stack. It’s dense yet tender, which holds in all the ingredients well, without anything spilling over.

  • The sides. Heinen’s has the best pickles. These sliced crispy stalks pack a savory punch! It’s the perfect balance of flavor with the sandwich. Also, grab a bag of kettle cooked chips, and in this case a sweet and tang bag of BBQ! You’ll have a new summer favorite on your hands, or in your hands!

TURKEY RACHEL SANDWICH RECIPE

Prep Time: 15 min | Cook Time: 5 min | Serving Size: 2

Ingredients

  • package of sliced rye bread

  • 2 tbsp butter for toasting bread in skillet

  • package of sliced swiss

  • thousand island dressing

  • container of Heinen’s pre-made coleslaw

  • Two Brother’s sliced turkey off-the-bone in deli to-go packs (I can make 4 sandwiches with 1 package)

  • Heinen’s sliced Kosher pickles (optional side)

  • Heinen’s BBQ Kettle Cooked Chips (optional side)

Instructions

Melt butter in a large skillet for up to 4 slices of rye bread. Depending on how many sandwiches you’re making, two sandwiches is my serving size starting point.

Place 4 slices of bread on skillet and toast until golden brown. Flip and add a little more butter underneath each slice if it becomes cooked off, or dry. In total this will probably take about 5 minutes.

For the cheese, once you flip the bread once, place swiss cheese slices on the tops of all slices while the bottom of the slices toast. (My slices of bread were narrow, so I cut the cheese squares in half vertically to put two on each bread slices.)

Remove bread and plate to begin constructing sandwiches.

Place your desired amount of thousand Island dressing on each slice that should have the cheese slightly melted on as well.

Place a hefty amount of the sliced turkey on one side, and then top with coleslaw on the turkey so that you can easily put the top bread slice over the coleslaw to complete the sandwich.

Plate with pickles and chips to serve!
