Spicy Chicken Skewers
SPICY MIDDLE EASTERN CHICKEN SKEWERS WITH ZA’ATAR BLEND
I’ve had quite a few burgers, skewers and kebabs in my time, but never had I tried ground chicken. Which is bonkers because I LOVE chicken. Give me a rotisserie chicken from Costco any day, every day and I will inhale it.
At our house we love beiruti za’atar spice blends, so I wanted to make something special for these skewers. Y’all, they are so good! Not to mention extremely easy. They’re pretty healthy for you to boot! It’s even got cooked quinoa and scallions for some great added texture.
SPICY MIDDLE EASTERN CHICKEN SKEWERS WITH ZA’ATAR BLEND RECIPE
Ingredients
1 lb ground chicken
3/4 cup cooked quinoa
4 scallions, chopped
1/2 cup fresh parsley, chopped
1 teaspoon ground cumin
1 teaspoon ground paprika
1 tablespoon Beiruti Za’atar spice
2 tablespoons chopped fresh dill
1/2 teaspoon cayenne pepper
1/2 teaspoon kosher salt
1 teaspoon fresh ground black pepper
1 lemon cut into wedges
1/2 cup ztatziki sauce for dipping (optional)
Instructions
Soak 6 skewers in water for 20 minutes.
In a large bowl, combine the chicken, quinoa, scallions, parsley, cumin, paprika, za’atar, cayenne pepper, salt, and black pepper. Gently stir together until everything is evenly distributed.
To shape the mixture around the skewers, first evenly divide the mixture into 6 portions. Place a portion in the palm of your hand and flatten it into about a 1/2-inch thick and 3-inch long oval patty. Place a skewer on top of the patty lengthwise and close your hand to evenly wrap the patty around the skewer. Shape so it’s about 3/4-inch thick. Repeat with the remaining skewers and chicken mixture.
Heat grill to medium-high. Grill the skewers, turning half way through, for 4.5 minutes on each side, until cooked through. Serve with lemon and sprinkle with dill.
