TURKEY BREAKFAST BLTE WITH SUN-DRIED TOMATO, CORN & GARLIC WAFFLE BUNS
I can’t tell you the last time I made a burger for myself. I can’t even recall when’s the last time I’ve had it at a restaurant. With quarantine still underway for some people, including ourselves, it’s going to be a while longer. This weekend we changed things up and made a turkey bacon burger.
Except this morning, it’s for breakfast, and this bacon is sweet to go with savory waffle buns. I’ve never done waffle buns before, but there’s a first time for everything, and this totally delivers. I usually make corn muffins with these ingredients below, but they definitely work here for waffles, and you’re well on your way to having a delicious turkey bacon waffle breakfast burger!
TURKEY BREAKFAST BLTE WITH SUN-DRIED TOMATO, CORN & GARLIC WAFFLE BUNS RECIPE
Waffle Ingredients
2 eggs
2 cups AP flour
1 3/4 cups milk
1/2 cup vegetable oil
2 tablespoon sugar
1 tablespoon lemon juice
4 teaspoons baking powder
1/4 teaspoon salt
3 tablespoons sun-dried tomato pesto
1 cup corn
1 teaspoon garlic, minced
Turkey Bacon Ingredients
8+ pack turkey bacon
1/4 cup dark brown sugar
3 tablespoons maple syrup
cracked ground black pepper

romaine heart lettuce
thin sliced sharp cheddar cheese
tomato slices
grilled egg
maple syrup to drizzle
Instructions
Set oven to 375°F. Line baking tray for turkey bacon with parchment paper. Combine the brown sugar and maple syrup, then spread generously over the turkey bacon strips that are lined on parchment. Set to bake for 25 minutes.
While the turkey bacon is baking in oven, mix your waffle ingredients. All wet first, then add all the dry to whisk until smooth. When waffle maker is ready, add appropriate amount of batter and cook for recommended waffle time (my waffle maker is 4 minutes or until green light turns off).
For the egg portion of the waffle burger, you can cook your eggs how you like. I like to beat 2 eggs first, then cook them in the shape of an omelette in a skillet, then fold it over so that it fits nicely within the waffle buns.
To construct your waffle, I do as follows: waffle bun, slice of cheddar, lettuce, egg, turkey bacon strips ( I cut 4 in half and use 8 per waffle), tomato slices (2), and top it off with one more slice of cheddar cheese, then the topper waffle bun. You may want to drizzle maple syrup either on the bacon and then continue the layering, or just pour on top before you eat. Enjoy!
