Almond And Coconut Berry Crisp
TOASTED ALMOND AND COCONUT MIXED BERRY CRISP WITH STRAWBERRIES, BLACKBERRIES AND BLUEBERRIES
I’ve been in the berry mood lately. January was lemons, now February is all things berries. It must be that Valentine’s Day mood.
There’s not too much that goes into this, but it helps to have multiple trays! Share it with your family, your loved one and you, or just yourself honestly!
TOASTED ALMOND AND COCONUT MIXED BERRY CRISP RECIPE
Ingredients
Filling Ingredients
5 cups mixed fresh strawberries, blueberries and blackberries, quarter the strawberries
1 tablespoon lemon juice
2 tablespoons brown sugar
1 tablespoon cornstarch
Crisp Ingredients
1/2 cup sliced almonds
1/3 cup coconut flakes ( I used Bob’s Red Mill)
1/2 cup old fashioned rolled oats
1/8 teaspoon nutmeg
1 teaspoon ground cinnamon
1 tablespoon honey
1/2 teaspoon vanilla paste or extract
2 tablespoons melted butter
Instructions
Heat oven to 350°F.
In a large. bowl, toss the filling ingredients with the berries.
Transfer to a 1 1/2 quart baking dish.
In a medium bowl, mix the crisp ingredients.
Bake for 22 minutes or until topping is golden brown.
Serve with ice cream if desired!
