Citrus Turmeric Overnight Oats

CITRUS TURMERIC OVERNIGHT OATS WITH QUINOA AND FRUIT

Overnight oats always seem to be in style, and making them with a citrus twist is no exception! An even brighter surprise for this tasty breakfast treat is to use turmeric that not only brightens the flavor, but also gives a beautiful orange yellow glow to your bowl.

I love adding a bunch of tart, fresh fruit with a granola mix of your choice to the mix!

There isn’t much involved when making overnight oats, but what you put in it makes a big difference in flavor because it’s quite literally, sitting in the flavors overnight. Some recipes require 2+ hours minimum, but to truly soften those oats, you should always soak them overnight in the ingredients.

To save the special ingredient for last, please welcome, quinoa! It works out quite well that Heinen’s has precooked quinoa, and it’s already soft when opened. This helps absorb more of the oat mixtures liquids and flavors, and also softens more along with the rolled oats that will need to be softened for sure.

Since this recipe IS overnight, I do like to cut convenient corners where I can, especially with these precooked quinoa bowls.

I do use a gluten free granola and rolled oats for my own diet, but feel free to use whichever kinds you. prefer!

CITRUS TURMERIC OVERNIGHT OATS WITH QUINOA AND FRUIT RECIPE

Ingredients

  • 1/2 cup rolled oats

  • 1/2 cup cooked quinoa ( I used tri-colored)

  • 2 tbsp chia seeds

  • 2 tbsp turbinado sugar

  • 1 tsp ground turmeric

  • 1 tsp ground cinnamon

  • 1 tsp vanilla extract

  • 3/4 cup coconut milk

  • 1/2 cup fresh orange juice

  • 2 tbsp maple syrup

  • unsweetened coconut flakes for topping

  • cut fruit for topping, I used kiwi, blackberry, strawberry and pineapple

  • granola mix for topping, or sweetened corn flakes

  • honey to drizzle on top if desired

Instructions

In a medium bowl (preferably with a tight lid), you will want to mix the liquids together first, starting with the coconut milk. If it’s easier to stir it from the can first to break up the hardened cream at the top, you can do that, then stir it in the bowl with the orange juice, vanilla extract and maple syrup.

Next, add in the turmeric, cinnamon, chia seeds and turbinado sugar. Stir until mixed completely.

Add in the cooked quinoa and the rolled oats and fold together to mix fully.

Put the lid on tight and place in the refrigerator for overnight.

Before serving in a bowl, cut your fruit, grab your granola mix and coconut flakes if using and the honey to drizzle on top.

I added the toppings in layers. Some fruit, some granola, coconut flakes, and then repeat. Lastly, topping it off with honey drizzle.
