FRESH FRUIT DESSERT PIZZA WITH LEMON CURD CREAM CHEESE FROSTING

Now I haven’t had this in decades. But when I saw these on Pinterest making a come back, I had to partake.

Instead of a sweet dough, I opted for a regular pizza dough. I don’t like fruit pizzas being TOO sweet. But you can certainly use a cookie dough. I love using lemon curd in the frosting to get a nice lemon flavor.

There are a variety of ways to construct a dessert pizza. It’s all in your own creative preference really. I like to either go full on scattered with colors of fruit, or this version, a gradient rainbow of colors. It’s more fun that way too! I use a pre-made store bought bag of pizza dough for the crust. It’s just easier. I don’t usually have time for letting dough proof or rest. We’re all in a hurry!

Drizzle of honey makes everything nice!

FRESH FRUIT DESSERT PIZZA WITH LEMON CURD CREAM CHEESE FROSTING RECIPE

Ingredients

  • 1 pre-made pizza dough ball, room temperature

  • 16oz honey pecan, or honey cream cheese

  • 1/2 cup lemon curd, I used store bought

  • 2 cups powdered sugar

  • mixed variety of fruit, depending on your preference, enough to cover a 14” pizza

  • honey and lemon zest to drizzle

Instructions

If you didn’t buy precut fruit (it’s way easier, trust me), slice all your fruit the way you want to. Have it ready for when it’s time to place on the pizza.

Depending on your pizza dough’s baking instructions, set your oven to that temperature. While the oven is preheating, roll out your dough over some flour to 14” creating a nice circle.

Place the 14” disc of dough over a pizza tray or large tray that fits it, and use a fork to poke holes all over so that the dough doesn’t rise too much. I like a thick crust, but sometimes it can get too tall.

Bake according to the dough packages instructions, mine was for 16 minutes.

While the dough is baking, in a food processor, blend the cream cheese, lemon curd and powdered sugar.

Once the dough is ready and lightly browned, remove and let cool for 30 minutes.

Spread the lemon curd cream cheese mixture over the pizza to have a nice thick layer. You will need to push some fruit down further than others because of their shape.

Begin placing your fruit all over the pizza in whatever way you like.

Once you’ve done that, drizzle with honey and grate lemon zest on top.
