PATRIOTIC PIE WITH MIXED BERRIES AND DRAGONFRUIT

Memorial Day is coming quick, and we’re already almost to summer time. Prepare to see the fruit pies and red, white and blue!

I used a pre-made pie crust from Heinens, which makes it so much easier! I also thawed out 2 crusts, and cut out star shapes with a cookie cutter from one of the pie crusts to cover the berries.

Topping your freshly warmed pie with strawberry ice cream can’t hurt either!

I don’t normally rush to make berry pies, but I wanted to also try to use dragonfruit, which is amazing to use as well! It also fits with the white part of red, white and blue!

PATRIOTIC PIE WITH MIXED BERRIES AND DRAGONFRUIT RECIPE

Ingredients

  • 2 pack pre-made pie crusts, thawed

  • 2 cups chopped strawberries

  • 1 cup blueberries

  • 1 cup chopped dragonfruit

  • 1 cup granulated sugar

  • 1/3 cup raspberry simple syrup (1 cup sugar, 1 cup water, handful raspberries to boil, strained)

Instructions

Preheat oven to 400°F.

Thaw frozen pre-made crusts.

Take a star shaped cookie cutter, and cut out from the spare crust, stars to top the pie.

In a medium pot, cook all fruit with sugar and syrup for 5-8 minutes until soft.

Drain the juice and put all berries in thawed pie crust.

Cover with the star-shaped crust cutouts.

Use an egg wash for the crust trim and the stars.

Bake for 25 minutes or until golden brown.
