Iced Mango Coconut Black Chai Tea
ICED BLACK CHAI TEA WITH MANGO AND COCONUT SIMPLE SYRUP
What’s more summer than iced tea? And there’s a mango coconut syrup involved? Yes please. This is another amazingly refreshing drink for the family, no booze about it. I’m sure you could add some if you wanted, but this is very delicious just the same.
I love making simple syrups for drinks. And I love that this drink is a great transition drink to the Fall. We are eerily almost to the end of summer, and this drink has the flavor of Fall, but still is refreshing for summer with coconut and mango. The syrup is super easy to make. VERY easy.
For the simple syrup, chop up one mango, throw out the core and skins. I buy Heinens precut mango to make it much easier. In a sauce pan, add the chopped mango, 1 cup of unsweetened dried shredded coconut and one cup of granulated sugar. Bring that syrup mixture to a boil and let it cook for 10 minutes. Take a masher, and mash the syrup, mainly the mango chunks, to extract some more mango flavor. After a minute or so of mashing, strain the syrup and collect in a jar container. You will need it for after the tea is steeped to mix.

Ingredients
10 bags of black chai tea bags
7 cups of water
1 cup of mango coconut simple syrup (scroll up for syrup instructions)
lemon wedges
extra mangoes for putting in tea for garnish and eating
mint for garnish
Instructions
See above for simple syrup instructions first.
In a medium stock pot, bring water to a boil, and let the bags of tea steep for about 30 minutes on low once it reaches a boil.
After that has steeped, remove bags and pour the tea into a large pitcher to cool. I wouldn’t add ice until you’re serving, because it will just immediately melt that ice.
Pour in the mango coconut simple syrup to the tea.
Add in chunks of mango that were cut beforehand, and toss in slices of lemons as well.
Let sit In fridge for a couple hours before serving.
When serving, in each glass, have a handful of ice, and garnish with mint!
