WATERMELON CUCUMBER CILANTRO MARGARITAS

You know it’s almost time for Spring when the margaritas start surfacing.

This post is no exception. Some fresh watermelon to add in the mix, and you’ve got some pretty tasty and fresh beverages to offer.

The stars of this margarita are cucumber, cilantro, watermelon and lime. You can even keep sipping these into the summer, because why not?

I’m actually not a huge fan of regular margaritas, like on the rocks, so this version is a blended frozen margarita. You can certainly opt out for the frozen, and just add the mixed drink over ice if you want.

There’s just something about a frozen margarita that hits the spot for me. Don’t forget to garnish with a cube of watermelon, or maybe a string of shaved cucumber. Whatever you wish for your margarita! I also am not a fan of salt rimmed drinks, but if that’s your jam, go for it. Just add lime juice to the rim and dip it in salt, or sugar really. I’m sure either would be fine.

WATERMELON CUCUMBER CILANTRO MARGARITAS

Prep Time: 5 min | Serving Size: 1 drink

Ingredients

  • Kosher salt, optional for garnishing rim

  • 2 mini cucumbers, chopped

  • 3/4 cup chopped watermelon (no rind or seeds)

  • 1 tablespoon chopped fresh cilantro

  • 3/4 cup ice cubes

  • 2.5 ounces silver tequila

  • juice of 1 fresh lime juice

  • 1 tablespoon) agave syrup

Instructions

In a food processor, pulse cucumber , watermelon and cilantro.

Strain with a sifter to get all juices.

Clean out the food processor, and into a shaker, add the cucumber watermelon juice with ice, tequila, lime and agave. Shake vigorously.

You can discard the pulp and leftover fruit.

If you don’t want a frozen margarita, add the ice cubes to a glass, and pour in your mixture to serve with garnish.

If you want a frozen marg, just add the mixture and ice to the food processor or blender, and blend to desired consistency. Add garnish.
