Shaved Cucumber Salad
SHAVED CUCUMBER SALAD
The fresh produce is thriving, so you know Spring is nearly here. You can make this crowd favorite anytime of the year but Spring feels especially right for this dish.
No store bought dressings required for this dreamy bowl. Just a few simple ingredients mixed together will serve you just fine that you probably may have already in your pantry and fridge.
I get my tahini, lemons, olives, white vinegar and herbs all from Heinen’s. Their name brand products are SUCH a good price, and the quality is amazing. I always have lemons and tahini on hand.
One of my favorite products to get at Heinen’s and to use in this salad, are the black and stuffed green olives. They also have way more of a selection at the olive and salad bar, but these canned olives are more economical for my purposes and might I add look great in our renovated pantry.
This recipe also includes the creamiest of feta cheese, also a Heinen’s product that I absolutely love. We like to keep a plate of extras for the salads incase you want yours extra chunky.
SHAVED CUCUMBER SALAD RECIPE

Ingredients
2 large English cucumbers, shaved, cut off ends and remove top skins
1 cup chopped black olives
1 cup chopped feta stuffed green olives
2 plum tomatoes, chopped, remove ends
1 package creamy feta
2 tablespoons capers, chopped
1 can garbanzo beans
2 tbsp tahini
1 lemon, juiced
1/2 tsp white vinegar
1/2 tsp za’atar
1/2 tsp oregano
1 tsp parsley
1 teaspoon black pepper
1/2 tsp red pepper flakes
1 tsp honey
1/3 cup olive oil
fresh thyme, chopped for topping salad
Instructions
In a large bowl, shave the cucumbers into long sheets and set in bowl.
In a separate cup, mix together tahini, lemon juice, white wine vinegar, za’atar seasoning, oregano, parsley, red pepper flakes, honey and then drizzle in olive oil slowly and whisk until mixed.
Set dressing aside for a bit until the final toss with the shaved cucumber.
In the bowl with shaved cucumber, make sure there isn’t sitting liquid from the cucumber. If there is, just hold them down and pour out the liquid in sink.
Add in both olives, tomatoes, garbanzo beans, and capers.
Pour in all dressing. Fold the dressing in using kitchen tongs until fully coating the cucumber and other ingredients.
Sprinkle on desired amount of feta, and red pepper flakes. Maybe a little more black pepper.
Lastly, if you want thyme added on top, add it here.
Serve!
