Watermelon Radish Salad
WATERMELON RADISH CUCUMBER SALAD WITH LEMON TAHINI VINAIGRETTE
We eat salads a LOT since we started working from home pre-COVID times. It saves us money, but with the same token, it can get kind of old, fast.
A good side salad to have with dinner, especially in the spring and early summer is this watermelon radish mix with fresh cucumbers, tomatoes, parmesan flakes and a bright, fresh lemon tahini vinaigrette.
They’re in season so you’re in luck! Watermelon radishes are very beautiful, and livens any table or boring salad. The lemon tahini dressing is just perfect with the radishes. Make sure you peel the outer skins because they’re a little thick and bitter if you leave the skin on.
WATERMELON RADISH CUCUMBER SALAD WITH LEMON TAHINI VINAIGRETTE RECIPE
Lemon Tahini Dressing Ingredients
1/2 cup fresh lemon juice
zest of 1 lemon
1/2 teaspoon kosher salt, 1/2 teaspoon ground black pepper, 1/2 teaspoon red pepper flakes
1/4 cup dijon mustard
2 tablespoons honey
3 tablespoons tahini
1 teaspoon dried thyme
1/2 cup olive oil
Salad Ingredients
1 head of romaine lettuce
1 head of radicchio lettuce
3-4 watermelon radishes, peeled and thinly slices in halves
1 cup of mini vine tomatoes
2 medium cucumbers, slightly peeled, halved vertically, then chopped
1/2 cup thick parmesan flakes
Instructions
In a medium bowl, add in all vinaigrette ingredients except olive oil. Use a whisk to mix, then slowly drizzle in the 1/2 cup of olive oil to get a complete blend.
Pour into a mason jar with a tight lid, shake, and place in refrigerator until it’s use.
For the salad, take all salad ingredients and mix with the desired amount of lemon tahini dressing.
You can top with more parmesan, then serve!
