Lobster & Heirloom Tomato Salad
LOBSTER & HEIRLOOM TOMATO SALAD WITH LOBSTER ROLL DRESSING
It doesn’t take much convincing for me to have a salad for lunch or dinner. In fact, we pretty much eat one every day for lunch, and adding some delicious seafood just sounded like perfection.
Of course I had to get the freshest of fresh seafood at Heinens, and I’m pretty obsessed with their lobster claw meat that they sell cooked already. I mean, no brainer for me.
And of course one of my favorite sandwiches aside from poboys and muffulettas is the lobster roll. So I wanted to make a lobster roll dressing for this salad to toss the lobster meat in.
LOBSTER & HEIRLOOM TOMATO SALAD WITH LOBSTER ROLL DRESSING RECIPE
Lobster Roll Dressing Ingredients
1/2 cup mayonnaise
1 tablespoon horse radish
juice of 1 lemon
1 teaspoon minced garlic
1 teaspoon black pepper
2 tablespoons minced capers
2 scallion stalks, chopped
1/2 teaspoon paprika
pinch of cayenne
1 teaspoon hot sauce
1 teaspoon dijon mustard
Lobster Salad Ingredients
1 pound lobster meat, or claw meat
1 small shallot, julienned
1 peach, sliced
1 avocado, pitted and cubed
2 hearts of romaine, chopped
3 mini english cucumbers, chopped
2-3 heirloom tomatoes, chopped
1 teaspoon pepper and red pepper flakes to sprinkle on top
Instructions
Mix all the lobster dressing ingredients in a small bowl.
Add in the lobster meat to the dressing and toss until full covered by dressing.
The remaining salad ingredients are to be put in a bowl and tossed.
Mix in the lobster with dressing with the lettuce mixture and serve.
