Balsamic Dressing Artichoke and Cucumber Salad

MARINATED ARTICHOKE AND CUCUMBER SALAD WITH BALSAMIC OLIVE OIL DRESSING

We’re inching slowly towards Spring, and with that comes a lot of fun, easy and delicious dishes. This is a hearty side dish or salad depending on what you’re making for those busy week days and nights.

Why You’ll Love This Recipe:

  • We’re headed into Spring, and that means it’s artichoke season at Heinens! There are a variety of options, but for a quick and easy week night table-scape, the canned marinated artichokes are key!

  • Artichokes really do “beef” up a salad with a great fresh flavor, and an added texture that can change up a boring salad that you might be too used to eating.

  • Artichokes aren’t the only show stoppers in this recipe. I can’t get through a hearty salad without chopped cucumbers, fresh tomatoes and herbs - and my favorite; a real chunky feta cheese crumble.

Artichokes aren’t the only item for this meal that I get from Heinen’s. Their extra virgin olive oil is a great marinade or dressing ingredient, and their dried organic herbs are top tier for added flavor. I sprinkle in a heft teaspoon or so of oregano into this recipe, and also a dash of red pepper flakes to really make that dressing/marinade shine. Did I mention there’s honey involved too?

MARINATED ARTICHOKE AND CUCUMBER SALAD WITH BALSAMIC OLIVE OIL DRESSING RECIPE

Prep Time: 20 min | Cook Time: N/A | Serving Size: 4-6 as side dish

Ingredients

  • 2 cans Heinen’s marinated quartered artichoke hearts

  • 1 carton Heinen’s on-the-vine red cherry tomatoes (remove from vine)

  • 3-4 mini cucumbers, chopped

  • 2 cup chopped radicchio lettuce mix

  • 1 package crumbled feta

  • fresh basil leaves to chop and mix into salad

Salad Marinade/Dressing Ingredients

  • 1/3 cup Heinen’s extra virgin olive oil

  • 2 tbsp balsamic vinegar

  • 3 tbsp honey

  • 1 tsp dried oregano

  • 1/2 tsp red pepper flakes

  • 1 clove garlic, minced

Instructions

The only steps to take for this recipe mix the salad marinade/dressing ingredients together rigorously in a measuring cup or any cup really, and stir right before pouring over the artichokes and tomatoes.

Mix and stir the marinade/dressing rigorously. Set aside until ready to pour over artichokes and tomatoes.

in a large bowl, add washed artichokes and tomatoes and pour in most of the dressing leave some to drizzle on top salad before serving.

In the final serving bowl for the salad, add the radicchio lettuce, cucumbers first. Second, add the artichokes and tomatoes. Toss in the feta and chopped basil to toss lightly.

Serve and add drizzle of marinade/dressing if desired!
