CRANBERRY MIMOSAS WITH “FROZEN” ROSEMARY SPRIGS

Towards this holiday season, Heinen’s introduces their Vin Hunter collection in the wine and spirits aisles. Specifically in season now, is the Vin Hunter Asolo Prosecco.
This particular prosecco is delivered all the way from Italy, and is an especially cold, crisp Brut that isn’t too sweet, which lends itself perfectly to a sweeter, cranberry filled recipe.
This mimosa is perfect for holiday parties, or even a small get together. The best part, which is totally optional - is the “frozen” rosemary sprigs that look like little holiday trees with snow, adorning your mimosa rims. In this recipe, I rim the glass with a fresh orange, then roll the rims on granulated sugar. Those “snow-filled” rosemary sprigs have agave nectar and sugar on them straight from the freezer for a perfect garnish!
Brut prosecco, in my opinion, is the best of the prosecco and champagne, because it isn’t sweet. It’s on the drier side, which really makes it a smooth drink. Too much sweet is never a good thing towards the end of the night!
CRANBERRY MIMOSA RECIPE
Prep Time: 1 hour (mini rosemary tree) | Serving Size: 1 drink
Ingredients
Vin Hunter Asolo Prosecco
Cranberry Juice
Cranberries
Orange slice for rim
agave nectar, or honey for rosemary
rosemary sprigs
granulated sugar for rim and rosemary
Instructions
To make the rosemary sprigs, on a large plate, add agave nectar generously and then take the sprigs and rub around and ensure most of the sprigs are covered.
Sprinkle the granulated sugar on each heavily, then place each on a paper towel or tray, and when finished with desired amount of sprigs, place in freezer for 45 min - 1 hour.
After that time in freezer is done, begin pouring drinks.
For each glass, rim with orange wedge to get fresh juice on rim.
Run the rim in a plate of granulated sugar until fully coated on juice.
In each glass, fill with 3/4 of the way full with prosecco.
Pour in desired amount of cranberry juice.
Drop in a few cranberries.
Add the “frozen” rosemary sprig to rim where it sits snug, or in the glass if you want it to dissolve the sugars.
