You may have seen cowboy caviar go viral over the last few seasons, and it’s still going strong! So many fresh ingredients that really enhance your get togethers table spread. With many ingredients you can get all at once, you’re bound to be making this easy appetizer or meal accoutrement at some point this summer!

COWBOY CAVIAR RECIPE

Cowboy Caviar Ingredients

  • 3 Roma tomatoes seeds removed, diced

  • 2 avocados diced

  • 1/2 cup diced red onion, or Heinen’s ready cut red onion pack in produce

  • 15 ounces canned Heinen’s organic black beans 1 can, rinsed and drained

  • 15 ounces canned Heinen’s organic garbanzo beans 1 can, rinsed and drained

  • 15 ounces canned Heinen’s whole kernel yellow corn, rinsed and drained

  • 1 bell pepper diced, any color, I used green

  • 1 jalapeño seeds removed, finely diced

  • 1/2 cup chopped fresh cilantro

  • Tortilla chips for serving

Dressing Ingredients

  • 1/3 cup olive oil

  • 2 tablespoons fresh lime juice

  • 2 tablespoons red wine vinegar

  • 2 teaspoons Heinen’s clover honey

  • 1/2 teaspoon salt

  • 1/2 teaspoon fresh ground black pepper

  • 1 teaspoon Heinen’s Italian seasoning

Instructions

As a starting point, make sure you pat down the canned beans and corn from rinsing stage, so that you don’t have unwanted juice in the bowl’s bottom after mixing this recipe.

In a large serving bowl that’s deep enough to mix the ingredients without overflowing, put all ingredients except for the tortilla chips in to bowl. You can separate them if you want to for this short time, but it isn’t necessary. This was done only for picture staging.

Next, make the quick dressing, and pour over the ingredients in the bowl, and delicately mix without breaking any of the beans or other vegetables.

It’s ready to serve, it’s literally that easy!
