GHIRARDELLI WHITE CHOCOLATE AND MALLOW SWIRL S’MORES BANANA BREAD

It’s definitely no secret this quarantine life has left most people baking their hearts out. Banana bread has been no exception.

Up until 2020, I had never baked banana bread. I don’t really love bananas that much. Well, after I made my last banana bread for the blog, I understood the hype and knew I’d basically be making more of these guys.

TheFeedFeed is having a Ghirardelli chocolate baking contest that has to involve s’mores and their famous chocolate squares. I was happy to oblige!

S’MORES BANANA BREAD RECIPE

Ingredients

  • 3 over ripe bananas

  • 3/4 cup granulated sugar

  • 1 egg

  • 1 tablespoon vanilla paste

  • 1/4 cup grapeseed oil

  • 2 cups AP flour

  • 1 teaspoon caraway seeds

  • 1 1/4 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1 teaspoon ground cinnamon

  • 1/3 cup Ghirardelli 100% cocoa powder

  • 1/4 teaspoon kosher salt

  • 1 cup white chocolate chips

  • 1 cup whipped mallow for top of batter to spread around

  • 1 cup crushed graham crackers, 1/3 cup for top of batter

  • 4 squares from Ghirardelli block, chopped for top of batter

Instructions

Preheat oven to 350°F.

Spray loaf 5” by 9” loaf baking pan with cooking oil, then line with parchment so that you can pull out the loaf post bake.

Mash the bananas in a large bowl. Whisk in the sugar, egg, vanilla and grapeseed oil.

Mix in the flour, cocoa powder, baking powder, baking soda, cinnamon, caraway seeds and salt. Try to get out most lumps.

Fold in the white chocolate chips and graham cracker bits with spoon spatula.

Pour all batter into prepped baking loaf pan.

Take the whipped mallow a spoonful at a time, and place dollops over the top of the batter. Use a large toothpick or small knife to draw swirls with it into the batter.

Place chopped up white chocolate squares over the top of the mallow swirl.

Sprinkle graham cracker bits (1/3 cup) over the top of the batter.

Place on center rack in oven for 1 hour and 10 minutes. Check at 1 hour mark with tooth pick, but it is a big loaf and needs time.

The loaf shouldn’t jiggle when removed from oven, and will slide out of the baking pan easily. 

Use more whipped mallow if necessary to serve!
