S’MORES COOKIES WITH DARK CHOCOLATE

Something about summer makes me think of camping, and camping definitely makes me think of s’mores.

I wasn’t a huge fan of campfire s’mores with the whole routine of roasting the mallow and sandwiching the melted chocolate with the graham crackers, but what I do love are some melty, just-out-the-oven s’mores cookies.

I add a little coffee to mine, because it enhances the chocolate with a next level flavor.

S’MORES COOKIES DOUGH RECIPE

Ingredients

  • 1 cup salted butter

  • 3/4 cup dark brown sugar

  • 1/2 cup granulated sugar

  • 2 large eggs

  • 2 tablespoons coffee

  • 2 teaspoons corn starch

  • 2 1/2 cups all purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 2 cups marshmallows, chopped (I like the square slab ones)

  • 1 cup graham crackers, chopped small

  • 1 cup dark chocolate chunks

  • 1 dark chocolate bar, chopped

Instructions

Preheat oven to 375°F.

Line 2 baking sheets with parchment paper.

In a large bowl, mix butter, brown sugar, and granulated sugar. Beat for 2-3 minutes until creamy. We don’t want any lumps!

Add in eggs and coffee until mixed.

Sift in a separate large bowl, the flour, cornstarch, baking soda and salt. Mix until just combined with hand or spoon.

Add the flour mixture to the wet mixture.

Add the graham cracker pieces, the marshmallows, and all chocolate chunks to the dough. You can save a little of each to place on the cookies once formed so that some stick out.

With an ice cream scoop, scoop 2-3 tablespoon sized balls to the parchment and make sure you give the cookies room to space out when they bake, because they will.

Press the balls down with your palms so that they cook evenly, and place any extra graham cracker, chocolate and mallow chunks that you want on top.

Bake for 10 minutes.
