Cucumber Rhubarb Gin Fizz

CUCUMBER RHUBARB GIN FIZZ

Gin is probably my favorite. Adding cucumber also is a summer vibe.

This time around I wanted to add another flavor, because gin fizzes can be a little basic in flavor. They’re meant to be refreshing.

So I added a meyer lemon sparkling water, lime, cucumbers and rhubarb bitters with some muddled mint. You can muddle in fresh cooked rhubarb when it’s in season. But for this drink, I had rhubarb bitters.

Ingredients

  • 2.5 oz gin (from cucumber gin muddle mixture)

  • 2 medium cucumbers or 1 large, chopped and muddled

  • 4 sprigs mint leaves

  • juice of 1 lime

  • meyer lemon sparkling water

Instructions

In a shaker glass, muddle the chopped cucumber, mint leaves, gin and lime juice. and 4 drops of rhubarb bitters.

Let the mixture sit in fridge for 30 minutes.

With a strainer or sifter, take the cucumber mixture and strain for the juice.

You should be able to get at least 2.5 oz of gin for a drink. I believe it can make about 4 oz.

In a glass, add ice, slices of lime and cucumber if desired, and pour in the 2.5 oz of gin strained.

Add a few more drops of rhubarb, and top off with the meyer lemon sparkling water. Garnish with mint.
