Apple Grilled Cheese Brioche
APPLE GRILLED CHEESE BRIOCHE SANDWICHES
Grilled cheese sandwiches are such a comfort food for this season. Everyone loves melted cheese right? To make this sandwich extra special for the Fall, I used sliced gala apples to grill first.
Growing up in the south, my dad used to always buy fresh brioche buns from the local bakeries. Here in Cleveland, I have access to that same kind of quality at Heinen’s!
APPLE GRILLED CHEESE BRIOCHE RECIPE
Ingredients Per Sandwich
2 thick cut slices of brioche bread
5oz pureed butternut squash with 1 tablespoon butter, 1 teaspoon cinnamon
1 tablespoon whipped cream cheese
1 tablespoon softened butter
4 thinly sliced and grilled apple cuts
8 1X4” cuts of monterey jack cheese at 1/4” thick (to spread in 2 layers of 4)
butter, cinnamon and honey to drizzle on apple slices for grilling
Instructions
On medium-high heat, sauté the apple slices that are slathered in honey and cinnamon. I grill mine in a grill pan, but if you do not have that option, sautéing is fine.
You will need to flip occasionally, after they are fully soft and marked with the grill lines, usually about 6-8 minutes. Set aside the apples to construct the brioche sandwiches.
On one side of the bread, spread the butter, the other, the cream cheese and butternut squash puree.
Place the sliced monterey jack cheese in 2 layers over the cream cheese, in alternating patterns.
Add 4 apple slices to each sandwich on top the cheese.
Complete the sandwiches with the buttered brioche slice.
Set grill or sauté pan to medium heat.
Add a few tablespoons of butter to pan, carefully place the sandwiches on the grill grate or lines.
Cook on each side about 3 minutes, or until each side gets darkened with grill marks.
Eat immediately to prevent cheese from hardening or stiffening.
