Chocolate Chip Cookie S'mores with Strawberries
CHOCOLATE CHIP COOKIE S’MORES WITH STRAWBERRIES AND MINT
I’m not the biggest fan of traditional s’mores, but when there’s fresh fruit involved and a chance to use chocolate chip cookies - I will.
Just because I’m using cookies as the graham cracker layers, doesn’t mean I’m whipping up a fresh batch. Who has time for that? I certainly don’t. I made my usual trip to Heinens and stopped by their bakery to get some fresh chocolate chip cookies sold by the dozen. When you see how easy this is, you’ll do the same!
CHOCOLATE CHIP COOKIE S’MORES WITH STRAWBERRIES AND MINT RECIPE
Ingredients
dozen or so chocolate chip cookies
dozen jumbo marshmallows
dark chocolate bars
carton of strawberries, sliced and slightly cooked/heated
couple sprigs of mint, torn into large pieces
Instructions
You can heat the sliced strawberries a few ways. Sauté in a skillet for a few minutes in light butter, use a creme brûlée hand torch until slightly browned and wilted, or even in the microwave for 30 seconds or so to get them soft.
There aren’t exact instructions because everyone builds their own s’mores their own way. However, the way I built these is using warmed cookies (microwave) as the s’more sandwich ends, adding the chocolate, then heating the marshmallows with the creme brûlée torch, over a stove, a campfire or using an extended hand lighter. Place marshmallow over chocolate. You will need to push down carefully so it doesn’t slide everywhere after you’ve heated it the amount you want.
Next, lay the strawberries as thick as you like, but remember, not too much bc they will slide out.
Top with a little bit of mint then close s’more with the top cookie and press down.
