Ingredients

  • 3 large bananas or 4 small-medium bananas (must be ripe)

  • 1.5 cups of GF oats

  • 1/2 cup Hu chocolate chips

  • 1/2 tsp vanilla extract

  • 1/3 cup of optional add in toppings like coconut flakes or chopped walnuts

  • sea salt optional for topping

Instructions

Set oven to 350°F.

Mash bananas first in large bowl.

Add in oats, folding in the chocolate chips as well to softly mix well.

Drop in the vanilla extract.

Use an ice cream scoop to pack in the cookie batter, placing them on a parchment liner in baking tray.

I use a drinking glass to press down each dough pile to make even cookies. I fit 8 cookies per tray. The cookies don’t spread when baking.

Bake for 12-14 minutes. An extra two minutes if you use additional cookie ingredients like the coconut and walnuts. Make sure to watch in case they over-brown.

Sprinkle the tops with sea salt if you desire.
